Blah...

I think it is my curse to become sick during what would normally be considered fun/exciting events! It's like my body waits until that moment when the most fun will occur and BAM! it crashes. I first felt this year's cold coming on Tuesday night. Ever since then I've been irratable, stuffy, and the like. It really puts a damper on the Thanksgiving festivities especially since we have family over. Ah well. At least I'm not throwing up. I've had one of those Thanksgivings too. Anyway, I hope you all had a good holiday. I'll be heading back to the Burg on Sunday.

I'm just a loser with nothing to talk about...

Good news. I am home with my family for the week. It is way nice to be home!!! Today we saw Twilight for free as my younger brother works at the theater. I wasn't very impressed with it. The first book is actually my favorite out of the four so I suppose I may have had some expectations. I hear they have plans to make a second movie. I will probably end up seeing it, knowing me. Well, as I'm relaxing with the fam we are watching one of our favorite movies, The Burbs. I'm sure most people find it strange, but then again, we are a weird family. Therefore, it fits us completely. Here's a little clip so you will know what you are missing out on.

For Stephanie Nielsen

Here it is! The recipe for my mom's chili!!!


1 lb groud beef
1/8 tsp garlic powder (or more to taste)
1 can kidney beans
1 (6 oz.) can tomato paste
1 tsp salt
1/2 c. chopped onion
1 can diced tomatoes
1/2 c. water
1 Tbsp. chili powder
1/4 to 1/2 tsp basil



Brown the ground beef and add the onion and garlic to the pan. Drain the beans and tomatoes and add to the meat, cutting up the tomatoes as you stir them in. Add the remaining ingredients and stir well. Bring to a boil, then reduce heat, cover, and let simmer for 20 minutes.


I like to top it with cheese and sour cream. It's really good with cornbread too!!!

So I never did give you this recipe Mary. So here it is!!!



Quick Chicken Enchiladas

2 to 3 c. cut up chicken (or two cans if you're in a hurry)
1 can cream of chicken soup
Nacho chees tortilla chips
2 c. grated cheese
1 1/2 cup sour cream
1 c. chunky salsa (or more to taste)



Mix the salsa, sour cream, and soup in a 9x13 in. pan. Add in meat and grated cheese. Cruch up 4 to 6 large handfuls of chips into the casserole. Stir in. Can sprinkle more cheese on top if desired. Bake at 350 for 20 to 25 minutes.

I'm thinking my happiness stems from a few things. Here comes list number two!!!

- I have a family who loves me
- I got a bunch of random hugs today
- I've had the pleasure to meet tons of awesome people this semester
- I'm not failing classes
- And I believe in a God who loves me and watches out for me

Everything is going to work out in the end. What more can I ask for?

She's Done it Again!!




What is it I've done again? Why, I've taken time out of my day to play with photo editing!!!! So some weekend before this one we are currently living through, Stephanie, Lindsey and I went around campus and took a bunch of photos!!! Now I didn't edit all of them so I'll let you see those as well as all of the edited versions I did make!!! I've kind of felt like being crafty, and since I don't have the same resources here as I do at home, this is pretty much as far as it gets in the photo area. I told Laura to rub some of her craftiness on me but she's convinced it doesn't work that way. Ah well. So I hope you enjoy some pictures!!!









Ye classic BYU-I sign picture!! There was some concern on how to get on top. That was too bad until we had to figure out how to get down without dying...Stephanie in particular. But as you can probably guess, we got it all figured out.







This tree by the Hinkley building just looked like it needed a friend. I was actually really distracted by the stairs. You will see why in the next pictures....

We needed a good all fall picture. Most of the leaves were good and dead already. So what better thing to do then throw them in the air!!







We ended up going to the gardens and found this willow tree. I like willow trees. Okay the first set of pictures are over. Now it's time to give you a mix of the ones I edited!!! On some you'll get four different versions of one pic! I'm not saying all of them are good though. Haha.















After these beautiful pictures, Stephanie, Chelsea and I took more some night when we were the only ones home. I will only put one on because I only edited one.
